Frozen Smoke
I’M JUST HERE FOR THE DRINKS
Sother Teague
I saw this recipe ages ago, then couldn’t for the life of me, remember where I had seen it.
I even went so far as to order a small smoker, just so I could experiment, and make it. Don’t worry, I will be smoking other shit as well. It won’t be a single project investment. Although, truth be told, I’m guilty of those as well.
Robs comment “shut up, smokey pineapple!
It is quite a sumptuous drink. Although next time I use the smoker, remember to put something under it, to protect my marble rolling slab. It did take a bit of cleaning.
I also used pear wood chips. The smoker came with 4 different kinds of wood chips. Being the novice that I am, I thought pear would impart the least contradictory flavour, of the 4 I have.
And as Other says “ there are 2 layers of smoke in this cocktail. The first from the inherent smokiness of Mezcal and the second from cold smoking the pineapple juice.”
It is
22.5ml Smoked Pineapple Juice
22.5ml Lime Juice
15ml Passionfruit Syrup
7.5ml Ancho Reyes
15ml Vida Mezcal- I used Verde Momento
45ml Olmeca Altos Blanco Tequila- I used Fortaleza Tequila, also Blanco
The directions are
Blend with ice until smooth. Pour into a glass and serve.
Garnish
Sother does scorched pineapple wedges, and a flower. I used all my pineapple to make the juice, not thinking I would need a bit later. Oops.
So, I used a couple of glass straws, a Capt. Tony swizzle, and a flower.
So enjoy it as much as we are.
