Maghrebi Mint Sour – Take2

A repeat of last night’s drink to begin with. We had a friend around for an informal BBQ, and a couple of drinks. It was a pleasant evening sitting on the roof, and right now, sunset is at about 10pm, and it stays light for nearly another hour after that. So most enjoyable.

0.75oz lime juice
1oz pineapple juice
1oz Moroccan mint tea syrup
1.5oz lightly aged/filtered rum (they recommend Don Q Cristal- I had Havana 3yo)

Build in shaker, shake with cubed ice, then strain over crushed ice in a Collins glass.
Garnish with a skewered dried apricot and a mint sprig.
(I was fresh out of dried apricots still, so used a cherry tomato)
