An interesting twist on a classic cocktail that had hints of World Famous Amsterdam Apple Pie. The smokey Gin gives this a nice flavour, and the mix of apples makes this a festive drink…we’re still in December, right?

• KYRO Gin, from Finland. Finnish rye gin seasoned in oak barrels and fierce weather. That’s what the label tells me.
• 60ml KYRO Gin
• 60ml fresh pressed apple juice
• 5ml spiced simple syrup
• Top with Mediterranean tonic
