I have been on a bit of a roll making this drink for friends lately. Despite the look of it, it is not a sweet drink. And it looks fantastic. I don’t have Pilsener glasses, well, not until I can find some funky ones at a local second hand shop anyway.
It’s an eye catching drink, if you want to impress people. And easy to make. It’s just that the tea needs to be made ahead.
15ml Lime Juice
15ml Passionfruit syrup
30ml Hibiscus Tea *
15ml Aperol
15ml unaged Jamaican Rum – Rum Fire recommended- I used RummieClub Overproof. Made here in Amsterdam by Judith de Bie @rummieclub
30ml Mezcal- Ilegal Joven
Build ingredients in shaker. Shake with ice, strain into a large Pilsner glass. Fill with fresh crushed ice.
Garnish
Pineapple fronds- I had pineapple no fronds. An orchid and a cherry on a sword!
I thought if I am reposting this drink, I probably should include the Hibiscus Tea recipe.
I made a half measure of this, as it still makes a small bottle of syrup. And as a home cocktail maker, it will last you a few drinks anyway.
So here goes for the half version-
Hibiscus Tea
28gms/1oz Dried Hibiscus
3 Allspice Berries
1 cinnamon Stick
8-9gms/1 tbsp ginger, chopped and peeled (FYI I never peel ginger anyway)
500ml/2 cups water
Combine all ingredients in a small saucepan, bring to the boil, and simmer for 10mins.
Remove from heat, and allow to steep for an additional 10mins. (I decant it at this stage in to a glass jug).
Strain and chill before using.
So you need to ideally make this a day ahead. But not essential.
