Well, he’s done it again, used an ingredient in a drink, that then I had to hunt down just so I could replicate it.

I do hope he doesn’t find this kind of stalky, like in an ‘every breath you take’ kind of way. But appreciates that I think he creates some wicked shit.
And to use samphire as a garnish. I think that’s so left field, that it’s amazing.

And for anyone interested, or who doesn’t know, a selkie is a marine legend that tells of people who are half fish, and half-human. In the water, they are seals, but on land, they shed their skin and take on human form.
Many books have been written about selkies, mostly novels, and they feature strongly in the folklore of the Hebrides, and other northern places.

45ml Monkey Shoulder Scotch Whisky
22ml Lillet Blanc
15ml The King’s Ginger (this is what I had to hunt for)
2 or 3 dashes of Bitter Truth celery bitters

Stir with ice and strain into a chilled coupe

Garnish
A sprig of raw samphire.
