I asked Rob what kind of drink he fancied tonight. I usually don’t give him a whole lot of choice. He usually just drinks what I make. However, last night, I did say, “pick a colour for your drink”. And he said “amber”, thinking he was funny, and wanting to go to a bar here for a beer. I didn’t wake up to his subtle hint, and went for bright amber, aka orange. Which was the Root Reviver last night.
So today, I said “what do you want tonight?”
He asked what kind of national day it was. Apparently it’s White Lotus Day. Why, I don’t know. But he did find this little beauty. I just don’t think he realised it was gonna be a small serve.
I had to whip up some toasted coconut syrup, especially just for this.
Now, apparently this was inspired by the TV show, and sort of a take on ‘It Puts The Lime In The Coconut’- because it’s exactly that as well. I guess that and a Piña Colada collision, with a touch of French 75 thrown in, for flair, right?
But a great choice for National White Lotus Day, wherever that is celebrated. And our continued lovely rain free days.
Ingredients:
7.5ml Toasted Coconut Syrup
30ml White Rum- here I used @rummieclub Colourful White
15ml Lime Juice
15ml Pineapple Juice
60ml Champagne- or Prosecco left over from the other night 😉
Instructions
Add all ingredients except the champagne to cocktail shaker and shake, with ice. Strain into a chilled Nick and Nora glass. Or another teensy receptacle. Top with your 60ml of Sparkly Whatever you have.
Garnish
A Lime Wheel, or in my case, some leftover toasted coconut.
