Total Eclipse of the Bar
With the impending eclipse here next week, I decided to go for a theme. I did a search of cocktails that had eclipse in their name, and came up with this little selection. Rob provided the accompanying graphics on his iPad, and so we were off, on an experimental evening of imbibing.
First up we had a light introduction to the evening. Closest companion would be a spritz. And this was delightful. The recipe says Prosecco, but here in Spain, you can get good Cava for under €5 a bottle, and so that’s what we went with. Cava being same same but different to Prosecco.

Solar Spritz
The Sanish sun always rises- even after a long night of tequila, tangled sheets, and a few questionable positions.
INGREDIENTS
- 60 ml Prosecco
- 30 ml Aperol or Select
- 20 ml fresh orange juice
- 15 ml soda water
- Orange slice or twist
- Lots of ice
METHOD
Mix all ingredients except Prosecco in a vessel of choice, a long glass is recommended. Stir together, then add ice to the top. Follow this by the Cava/Prosecco, and then add garnish.
